Zucchini Loaf
Ingredients
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon cinnamon
- 1 cup vegetable oil
- 2 1/4 cups of white sugar
- 3 eggs
- 2 cups shredded zucchini
- 1 cup chopped walnuts (optional)
Method:
- Shred the zucchini
- Preheat the oven to 325 F
- Mix the dry ingredients in a medium bowl (optional)
- Mix the wet ingredients in a large bowl
- Add the zucchini and optional walnuts
- Divide the batter into two loaf pans and bake for 60-70 minutes
