Method:

  1. Shred the zucchini
  2. Preheat the oven to 325 F
  3. Mix the dry ingredients in a medium bowl (optional)
  4. Mix the wet ingredients in a large bowl
  5. Add the zucchini and optional walnuts
  6. Divide the batter into two loaf pans and bake for 60-70 minutes
  7. Enjoy your homemade zucchini loaf!
